Like each of the manual espresso machines featured on this site, the gold Europiccola depends heavily on operator skill. With this espresso machine, the operator is the pump. By lifting the lever, a piston inside the group is raised, allowing water under pressure to infuse the coffee in the filter holder. The lever is then lowered, causing the piston to force the water through the coffee and into the cup. The operator can vary the speed at which the water passes through the coffee, ensuring that extraction meets his or her exacting standards. As with all lever espresso machines, the la Pavoni EG-8 is not for everyone. However, it will reward those willing to learn the intricacies of the machine and the brewing process. It is capable of producing the finest crema capped shots of espresso you have ever had.
To use the la Pavoni Europiccola, unscrew the top knob and pour in cool, clean water to the top of the sight glass. Replace the knob and turn the unit on via the power switch. A light will illuminate. Wait for the green light in the power switch to turn off. (About 5 minutes.) Open the steam knob one turn and allow steam to escape for a few seconds and then close the steam knob. Raise and lower the lever a few inches 4 or 5 times to warm the group. Remove the coffee filter handle. Place the coffee filter basket into the handle, fill with coffee and tamp. Insert the coffee handle into the group. Raise the lever and allow coffee to pass through the handle, then lower the lever to start the flow of coffee.
This espresso machine can easily produce .8 BAR of pressure. In addition to the many features described below, the la Pavoni EG-8 has two important safety systems that prevent damage from over heating. 1) If the boiler reaches unsafe temperature levels, a thermostat will shut the boiler off. This thermostat can be reset once the machine cools. 2) There is also a pressure relief valve that automatically opens to relieve excessive pressure inside the boiler. The construction of the boiler and portafilter are worth noting. The boiler is constructed of solid brass to ensure that the proper water temperature can be easily reached and maintained. The nonpressurized portafilter is constructed of 12 oz. of solid brass. The la Pavoni Europiccola is not only a timeless beauty, it possesses the hallmarks of quality craftsmanship.
