This is the NEW 16 cup, gold plated la Pavoni Professional. The La Pavoni Professional features a solid brass boiler that is gold plated and lacquer coated. The boiler capacity is 38 ounces. In addition, the gold plated la Pavoni Professional features rosewood handles and knobs, a mounted pressure gauge and dual frothing systems. Like each of the manual espresso machines featured on this site, the la Pavoni Professional allows the user to be the artisan in crafting the perfect shot. The la Pavoni Professional is a piston lever espresso machine that depends heavily on operator skill. With this manual machine, the operator is the pump. By lifting the lever, a piston inside the group is raised, allowing water under pressure to infuse the coffee in the filter holder. The lever is then lowered, causing the piston to force the water through the coffee and into the cup. The operator can vary the speed at which the water passes through the coffee, ensuring that extraction meets his or her exacting standards. As with all lever espresso machines, the la Pavoni Professional is not for everyone. However, the la Pavoni Professional will reward those willing to learn the intricacies of the machine and the brewing process. It is capable of producing the finest crema capped shots of espresso you have ever tasted.
The la Pavoni Professional can produce sixteen back-to-back two oz. shots, one or two at a time, and can easily produce .8 BAR of pressure. In addition to the many features described below, the la Pavoni PPG-16 has two important safety systems that prevent damage from over heating. 1) If the boiler reaches unsafe temperature levels, a thermostat will shut the boiler off. This thermostat can be reset once the machine cools. 2) There is also a pressure relief valve on the la Pavoni Professional that automatically opens to relieve excessive pressure inside the boiler.
The construction of the boiler and portafilter are worth noting. The boiler is constructed of solid brass to ensure that the proper water temperature can be easily reached and maintained. The nonpressurized portafilter is constructed of 12 oz. of solid brass. The la Pavoni PPG-16 is not only a timeless beauty, it possesses the hallmarks of quality craftsmanship.
